For the Meatloaf Layer

  • 1 lb ground beef

  • 1/2 cup diced onion

  • 1/2 cup breadcrumbs

  • 1 large egg

  • 1/4 cup milk

  • 1 tsp salt

  • 1/2 tsp pepper

For the Mac and Cheese Layer

  • 2 cups uncooked macaroni

  • 2 cups shredded cheddar cheese

  • 2 tbsp butter

  • 2 tbsp flour

  • 2 cups milk

  • 1/2 tsp paprika

  • 1/2 tsp dry mustard

  • 1/2 tsp pepper

  • Salt to taste


Instructions

  1. In a mixing bowl, combine ground beef, onion, breadcrumbs, egg, milk, salt, and pepper. Mix until just combined.

  2. Press the meat mixture into a greased baking dish to form an even layer and bake for 20 minutes.

  3. Meanwhile, cook the macaroni according to package directions. Drain and set aside.

  4. In a saucepan, melt butter over medium heat. Add flour and cook for one minute.

  5. Slowly whisk in milk until the sauce thickens, then season with salt, pepper, paprika, and dry mustard.

  6. Stir in shredded cheddar until melted and smooth.

  7. Combine the cheese sauce with the cooked macaroni.

  8. Pour the macaroni mixture over the partially baked meatloaf. Top with additional cheese if desired.

  9. Return to the oven and bake for 25 minutes, or until the top is bubbly and lightly golden.

  10. Let rest for 5 minutes before slicing and serving.

Notes

Use freshly shredded cheese for the best melt and flavor.

Do not overcook the macaroni; it will continue to soften in the oven.

You can swap ground beef for turkey or chicken for a lighter version.
