Instructions
-
Melt the Creamy Base
In a large skillet or saucepan over medium heat, add the cream cheese and sour cream. Stir continuously until smooth and fully combined. -
Add the Shredded Cheeses
Slowly stir in the sharp cheddar and Monterey Jack cheeses. Continue mixing until everything melts into a smooth, creamy sauce.
Tip: If the mixture becomes too thick, add 1–2 tablespoons of milk. -
Mix in Vegetables and Spices
Add the diced tomatoes, green chilies, green onions, and cilantro. Sprinkle in cumin, garlic powder, onion powder, chili powder, salt, and pepper. Stir well until evenly combined. -
Cook Until Hot and Bubbly
Continue cooking for 5–7 minutes over medium heat, stirring frequently. The dip should thicken slightly and develop a velvety texture.
-
Serve Warm
Transfer the dip to a serving bowl and garnish with extra cilantro or green onions. Serve immediately with chips or fresh vegetables.
Notes
-
Shred cheese from a block for the smoothest melting.
-
Keep heat on medium or lower to prevent graininess.
-
To keep the dip warm for longer, use a small slow cooker on the warm setting.
-
Add a splash of milk when reheating to restore creaminess.
