A warm and flavorful layered sushi casserole with seasoned rice, flaky baked salmon, creamy filling, and a spicy mayo topping. All the delicious sushi flavors in an easy, scoopable dish perfect for family dinners or parties.

Ingredients

Sushi Rice Layer

  • 2 cups dry sushi rice (Calrose recommended)

  • 2 cups water

  • 1/4 cup seasoned rice vinegar

Salmon Layer

  • 1 1/2 lb salmon fillet

  • Salt and pepper, to taste

  • 1/2 tsp garlic powder

Filling Mixture

  • 8 oz imitation crab meat, chopped (or real crab)

  • 1/2 cup Japanese mayonnaise (Kewpie recommended)

  • 4 oz cream cheese, softened

  • 1 Tbsp sriracha (adjust for heat level)

  • 1 Tbsp low-sodium soy sauce

  • 2 Tbsp furikake

Toppings & Serving

  • Spicy mayo (mayo + sriracha + lime juice)

  • Green onions, thinly sliced

  • Black and white sesame seeds

  • Serve with roasted seaweed sheets, unagi sauce, cucumber slices, and avocado


Instructions

  • Rinse sushi rice in a fine-mesh sieve under cold water for 1 minute to remove excess starch.

  • Cook rice in rice cooker with 2 cups of water until tender.

  • Transfer cooked rice to a tray and gently fold in seasoned rice vinegar. Let cool completely.

  • Preheat oven to 400°F (205°C).

  • Season salmon fillet with salt, pepper, and garlic powder.

  • Bake salmon for 15–20 minutes, or until internal temperature reaches 145°F (63°C). Let cool slightly, then flake into pieces.

  • In a large bowl, combine flaked salmon, chopped crab, Japanese mayo, softened cream cheese, sriracha, soy sauce, and half the furikake. Mix until creamy and combined.

  • Spread the cooled sushi rice into a 9×13-inch baking dish, pressing lightly into an even layer.

  • Sprinkle remaining furikake over the rice.

  • Spread the salmon mixture evenly on top of the rice.

  • Broil for 4 minutes until the topping is lightly caramelized.

  • Drizzle spicy mayo over the top and garnish with sesame seeds and green onions.

 

  • Serve warm with roasted seaweed, cucumber, and avocado.

Notes

  • Cool the rice fully before layering to avoid steam softening the topping.

  • Adjust sriracha for more or less spice depending on the audience (kid-friendly option).

 

  • Kewpie mayonnaise gives the most authentic sushi restaurant flavor.
