Ingredients

  • 12 sheets of puff pastry (I use JusRol Vegan + Gluten-free Puff Pastry)

  • 130g of dairy-free cream cheese

  • 15g of gluten-free / plain flour (depending if you are making them gluten-free)

  • 15g of caster sugar + extra for sprinkling

  • 4 tablespoons of dairy-free milk

  • Fresh strawberries


Instructions

  1. Prepare the Oven and Trays
    Preheat the oven to 180°C fan. Line two large baking trays with greaseproof paper.

  2. Prepare the Pastry
    Unroll the puff pastry, keeping the baking paper underneath. Lightly roll to smooth creases. Dust with plain flour if sticky.

  3. Cut the Shapes
    Cut heart shapes from the pastry and place them on the prepared trays. Use a smaller heart cutter to gently press an indentation into the center of each shape without cutting through.

  4. Make the Filling
    In a bowl, mix the dairy-free cream cheese, flour, and caster sugar until thick and creamy. Transfer to a piping bag or use a spoon.

  5. Fill and Top
    Pipe or spoon the filling into the indented center of each pastry. Wash and slice the strawberries and place a few slices on top of the filling.

  6. Brush and Sprinkle
    Brush the pastry edges with dairy-free milk and sprinkle lightly with caster sugar.

  7. Bake
    Bake in the middle of the oven for 10–15 minutes, until puffed, golden, and flaky. Bake trays separately if needed.

  8. Cool and Serve
    Allow to cool slightly, then finish with a dusting of icing sugar before serving.

Notes

  • Keep puff pastry cold until ready to bake for best rise.

  • Avoid overfilling to prevent leakage during baking.

  • Best enjoyed fresh for maximum flakiness.
