Description

These McGriddle muffins combine soft pancake-style batter with sausage, eggs, and melted cheese for an easy breakfast you can make at home. They’re warm, filling, and perfect for busy mornings, meal prep, or breakfast on the go.

For the Muffins

  • 1 cup all-purpose flour

  • 1 tbsp sugar

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 cup milk

  • 1 egg

  • 2 tbsp melted butter

  • 2 tbsp maple syrup

For the Filling

  • 6 sausage patties cooked and flattened

  • 6 eggs scrambled or fried

  • 6 slices American cheese

Optional Add-ins

  • Sharp cheddar cheese for stronger flavor

  • Turkey sausage for a lighter option

  • Drizzle of hot honey for a sweet-spicy twist


Instructions

  • Preheat the oven to 350°F (175°C). Grease a standard muffin tin well and set aside.

  • In a large bowl, whisk together flour, sugar, baking powder, and salt until evenly combined.

  • Add milk, egg, melted butter, and maple syrup to the dry ingredients. Stir gently until just combined, being careful not to overmix.

  • Cook the sausage patties in a skillet until fully browned. Drain excess grease and flatten slightly so they fit inside the muffin cups.

  • Scramble or fry the eggs according to preference and set aside.

  • Spoon a small layer of batter into the bottom of each muffin cup.

  • Add one sausage patty, a portion of egg, and half a slice of American cheese to each cup.

  • Cover the filling with additional batter until the muffin cups are just filled.

  • Bake for 18–20 minutes, or until muffins are puffed and golden brown.

 

  • Let the muffins cool slightly before removing from the pan. Serve warm.

Notes

  • Do not overmix the batter to keep muffins soft and fluffy.

  • Allow muffins to cool slightly so layers hold together when removed.

 

  • Store leftovers once fully cooled.
