Instructions

Preheat the grill to medium-high heat.

In a bowl, toss the shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper if using.

Grill the shrimp for 2–3 minutes per side until pink, opaque, and fully cooked. Remove from the grill and set aside.

In a separate bowl, combine the thawed corn, diced red onion, chopped cilantro, minced jalapeño if using, lime juice, and salt. Mix well and set aside.

In a small bowl, stir together the mayonnaise, sour cream, cilantro, lemon juice, minced garlic, salt, and black pepper until smooth and creamy.
