Ingredients
-
½ cup low-sodium chicken broth
-
2 tablespoons olive oil
-
1 teaspoon kosher salt
-
½ teaspoon onion powder
-
½ teaspoon dried thyme
-
½ teaspoon ground paprika
-
¼ teaspoon ground black pepper
-
¼ teaspoon garlic powder
-
4 boneless, skinless chicken breasts
Instructions
-
Pour the chicken broth into the bottom of the slow cooker, spreading it evenly.
-
In a small dish, combine the kosher salt, onion powder, dried thyme, paprika, black pepper, and garlic powder.
-
Pat the chicken breasts dry, then rub them evenly with olive oil.
-
Sprinkle the seasoning mixture over the chicken breasts, pressing lightly so it adheres.
-
Place the seasoned chicken breasts into the slow cooker in a single layer.
-
Cover and cook on high for 3–4 hours or low for 4–6 hours, until the chicken is fully cooked and reaches an internal temperature of 165°F.
-
Remove the chicken from the slow cooker and let it rest for a few minutes before slicing or shredding.
Notes
-
Avoid lifting the lid during cooking to maintain steady heat.
-
Resting the chicken helps keep it moist when slicing or shredding.
-
Ideal for meal prep, salads, bowls, tacos, and sandwiches.
