Description

Prep Time: 5 minutes
Cook Time: 3–4 hours (high) or 4–6 hours (low)
Total Time: Up to 6 hours
Servings: 4 servings

Ingredients

Scale
  • ½ cup low-sodium chicken broth

  • 2 tablespoons olive oil

  • 1 teaspoon kosher salt

  • ½ teaspoon onion powder

  • ½ teaspoon dried thyme

  • ½ teaspoon ground paprika

  • ¼ teaspoon ground black pepper

  • ¼ teaspoon garlic powder

  • 4 boneless, skinless chicken breasts

Instructions

  • Pour the chicken broth into the bottom of the slow cooker, spreading it evenly.

  • In a small dish, combine the kosher salt, onion powder, dried thyme, paprika, black pepper, and garlic powder.

  • Pat the chicken breasts dry, then rub them evenly with olive oil.

  • Sprinkle the seasoning mixture over the chicken breasts, pressing lightly so it adheres.

  • Place the seasoned chicken breasts into the slow cooker in a single layer.

  • Cover and cook on high for 3–4 hours or low for 4–6 hours, until the chicken is fully cooked and reaches an internal temperature of 165°F.

  • Remove the chicken from the slow cooker and let it rest for a few minutes before slicing or shredding.

Notes

  • Avoid lifting the lid during cooking to maintain steady heat.

  • Resting the chicken helps keep it moist when slicing or shredding.

  • Ideal for meal prep, salads, bowls, tacos, and sandwiches.
