Ingredients

4 small to medium chicken breasts (or 2 large halved)

Salt and pepper

2 tablespoons olive oil

3–4 cloves garlic, minced

1 cup light or heavy cream

1 tablespoon Italian seasoning or oregano

1/2 cup grated parmesan cheese

1 cup chopped spinach (optional)
Instructions

Season the chicken breasts generously with salt and pepper on both sides.

Heat the olive oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook for 5–6 minutes per side, until golden brown, crispy, and cooked through. Remove the chicken from the pan and set aside.

Reduce the heat to medium-low. Add the minced garlic to the skillet and sauté for about 30 seconds, just until fragrant.

Stir in the cream, Italian seasoning (or oregano), and grated parmesan cheese. Cook, stirring, until the sauce is smooth and slightly thickened.

If using spinach, add it to the sauce and stir until just wilted.

Return the chicken to the skillet, spoon the sauce over the top, and let it simmer for about 1 minute before serving.

Use a heavy-bottomed skillet for best browning.

Avoid overheating the garlic to prevent bitterness.
