Ingredients
-
4 tablespoons unsalted butter, melted
-
1/3 cup granulated sugar, plus extra for rolling
-
1 large egg yolk
-
1/2 teaspoon vanilla extract
-
1 teaspoon red gel food coloring
-
1/2 cup + 1 tablespoon all-purpose flour
-
2 tablespoons unsweetened cocoa powder
-
1/4 teaspoon baking soda
-
1/8 teaspoon fine salt
-
6 white chocolate peanut butter hearts (like Reese’s)
Instructions
-
Prepare the Oven and Pan
Preheat the oven to 350°F. Line a small baking sheet with parchment paper or a silicone baking mat. -
Mix Wet Ingredients
In a bowl, stir together the melted butter and granulated sugar until smooth. Add the egg yolk, vanilla extract, and red gel food coloring, mixing thoroughly until evenly combined. -
Add Dry Ingredients
Sprinkle the flour, cocoa powder, baking soda, and salt evenly over the mixture. Stir just until combined, being careful not to overmix. -
Divide the Dough
Press the dough flat in the bowl and divide it in half by eye. Divide each half again to form 6 equal portions. -
Shape and Roll
Roll each portion into a smooth ball. Lightly roll each ball in extra granulated sugar and place them evenly spaced on the prepared baking sheet. -
Bake
Bake for 10–12 minutes, until the cookies spread slightly, develop light cracks on top, and appear set on the surface while still soft inside. -
Cool Briefly
Let the cookies rest on the baking sheet for 2 minutes, then transfer to a wire rack. Cool for about 10 minutes. -
Add Chocolate Hearts
Gently press one white chocolate peanut butter heart into the center of each cookie. Transfer cookies to the refrigerator for 30 minutes so the hearts set without melting. -
Serve
Bring cookies back to room temperature before serving for the best texture.
Notes
-
Pull cookies from the oven while centers are still soft for a chewy result.
-
Stir food coloring thoroughly to avoid uneven color.
-
Chilling after adding the chocolate hearts helps maintain their shape.

This recipe is ideal for small batch cookies and Valentine desserts.
