For the Macaron Shells

  • 130 g powdered sugar

  • 120 g almond flour

  • 7 g cocoa powder

  • 105 g egg whites

  • 100 g granulated sugar

  • 1 teaspoon vanilla paste

  • ½ teaspoon red food gel

For the Mascarpone Frosting

  • 113 g (½ cup) heavy cream, cold

  • 50 g (¼ cup) granulated sugar

  • 113 g (½ cup) mascarpone, cold

  • ½ teaspoon vanilla paste


Instructions

  1. Prepare Template
    Trace heart shapes about 2 inches apart on parchment paper and place it under a clean sheet on a baking tray.

  2. Sift Dry Ingredients
    Sift powdered sugar, almond flour, and cocoa powder together twice to ensure a smooth batter.

  3. Heat Egg Whites and Sugar
    Combine egg whites and granulated sugar in a heatproof bowl. Heat over a double boiler until sugar dissolves or reaches 120°F.

  4. Whip Meringue
    Transfer to a mixer and whisk until soft peaks form. Add vanilla paste and red food gel, then continue whisking until stiff peaks.

  5. Macaronage
    Fold in one-third of the dry ingredients, then the rest. Spread batter along the bowl to deflate slightly until it flows smoothly and forms figure eights.

  6. Pipe Shells
    Pipe batter into heart shapes, tap the tray firmly to release air bubbles, and let rest 30–40 minutes until dry to the touch.

  7. Bake
    Preheat oven to 300°F. Bake for about 12 minutes and cool completely before removing.

  8. Make Frosting
    Whisk heavy cream, sugar, mascarpone, and vanilla on low, then medium-high speed until thick (about 30 seconds).

  9. Assemble
    Pipe frosting onto one shell and sandwich with another, pressing gently to seal.
