For the main dish:

  • 1 tbsp olive oil

  • 2 tsp dijon mustard

  • 1/4 cup lemon juice (freshly squeezed)

  • 2 1/2 cups chicken broth (low-sodium)

  • 1 1/3 cups orzo (uncooked)

  • 1 lb ground turkey (extra lean)

  • 1/2 tbsp olive oil

  • 12 oz broccoli, cut into florets

  • 2 tsp lemon pepper seasoning

For finishing:

  • Red pepper flakes (optional)

  • 2 tbsp butter (unsalted)

  • 1 cup whole milk

  • 2 oz shredded parmesan


Instructions

  • Sauté the Broccoli
    Heat 1 tbsp olive oil in a skillet over medium heat. Add broccoli florets and cook 5–6 minutes until slightly charred and bright green. Remove and set aside.

  • Cook the Ground Turkey
    Add 1/2 tbsp olive oil to the skillet. Add the ground turkey and cook, breaking it apart, until fully browned. Push to one side to create space.

  • Toast the Orzo
    Add the orzo to the empty side of the skillet. Toast 1–2 minutes until lightly golden and fragrant, enhancing its nutty flavor.

  • Add Seasonings and Liquids
    Stir in lemon pepper, Dijon mustard, and lemon juice.
    Deglaze with 1 cup chicken broth, scraping any browned bits.
    Add the remaining broth (1.5 cups) and cook 6–8 minutes until the orzo absorbs the liquid and becomes tender.

  • Make It Creamy
    Lower heat. Add butter, milk, and parmesan. Stir until melted and creamy, coating the turkey and orzo evenly.

 

  • Finish and Serve
    Fold the charred broccoli back into the skillet. Add red pepper flakes if desired. Serve warm with extra parmesan.
