Creamy, comforting, and incredibly easy, this Crockpot Marry Me Chicken is made with tender chicken breasts slow-cooked in a rich Parmesan cream sauce with sun-dried tomatoes. It’s a simple, satisfying dinner that works beautifully for busy nights and meal prep.
Ingredients

4 boneless, skinless chicken breasts

½ cup chicken broth

½ cup heavy cream

1 cup grated Parmesan cheese

1 tbsp cornstarch

1 tbsp garlic, minced

1 tsp dried oregano

½ tsp dried thyme

¼ tsp red pepper flakes (optional for heat)

½ cup sun-dried tomatoes, chopped

2 tbsp butter

Salt and pepper, to taste

Fresh basil or parsley for garnish (optional)
Instructions

Season the chicken breasts on both sides with salt and pepper. Set aside.

In a bowl, whisk together the chicken broth and cornstarch until smooth and fully dissolved.

Add the heavy cream, Parmesan cheese, minced garlic, oregano, thyme, and red pepper flakes (if using) to the bowl. Whisk until well combined and creamy.

Place the seasoned chicken breasts in the bottom of the crockpot in a single layer.

Pour the sauce mixture evenly over the chicken, making sure all pieces are well coated.

Sprinkle the chopped sun-dried tomatoes over the top of the chicken and sauce.

Cover and cook on low for 4 hours or high for 2 hours, until the chicken is fully cooked and tender.

During the last 30 minutes of cooking, add the butter to the crockpot and gently stir as it melts into the sauce.
