Description

This one-pot cheesy hamburger potato soup is a comforting cold-weather dinner made with ground beef, tender potatoes, and a creamy cheddar cheese sauce. It’s a cozy, family-friendly soup that comes together easily and delivers hearty flavor in every bowl.


Ingredients

  • 1 pound ground beef

  • 4 cups diced potatoes (about 4 medium potatoes)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 4 cups chicken broth

  • 2 cups shredded cheddar cheese

  • 1 cup milk

  • 2 tablespoons all-purpose flour

  • 2 tablespoons butter

  • Salt and pepper, to taste

  • Optional toppings: chopped green onions, crispy turkey bacon bits, additional shredded cheese


Instructions

  • Heat a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.

  • Add the diced onion and minced garlic to the pot. Cook for 3–4 minutes, stirring often, until the onion is translucent and the garlic is fragrant.

  • Stir in the diced potatoes, coating them evenly with the beef and onion mixture.

  • Pour in the chicken broth, scraping the bottom of the pot to release any browned bits. Bring to a gentle boil, then reduce heat, cover, and simmer for 10–15 minutes, until the potatoes are fork-tender.

  • In a separate saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1–2 minutes until lightly golden. Slowly add the milk, whisking constantly, until thickened. Remove from heat and stir in the shredded cheddar cheese until smooth.

 

  • Pour the cheese sauce into the soup pot and stir until fully combined. Season with salt and pepper to taste. Simmer for another 5 minutes to blend flavors.

Notes

  • Dice potatoes evenly so they cook at the same rate.

  • Stir gently after adding the cheese sauce to maintain a smooth texture.

 

  • The soup thickens slightly as it rests.
