Ground Turkey Taco Soup is a one-pot, no-fuss meal made for tight schedules. Lean ground turkey simmers with beans, corn, and taco seasoning to create a hearty, warming soup that comes together quickly and stores well for future meals.
Ingredients

Olive oil spray

1.3 lbs 99% lean ground turkey

1 medium onion, chopped

1 bell pepper, chopped

10 oz can rotel tomatoes with green chilies

15 oz canned or frozen corn, drained

15 oz no salt added kidney beans, drained

8 oz tomato sauce

16 oz can fat-free refried beans

2 tablespoons + 1 1/2 teaspoons taco seasoning, or 1 packet store bought low-sodium taco seasoning

2 1/2 cups less-sodium chicken broth
Instructions

Spray a large pot with olive oil spray and place it over medium heat.

Add the ground turkey and cook, breaking it up with a wooden spoon, until browned and cooked through.

Add the chopped onion and bell pepper and cook for 2–3 minutes, until slightly softened.

Add the rotel tomatoes with green chilies, corn, kidney beans, tomato sauce, refried beans, taco seasoning, and chicken broth.

Stir well to fully combine all ingredients.

Bring the soup to a boil, then cover and reduce heat to a simmer.

Simmer for 10–15 minutes, stirring occasionally, until heated through and slightly thickened.
