Description

Ground Turkey Taco Soup is a one-pot, no-fuss meal made for tight schedules. Lean ground turkey simmers with beans, corn, and taco seasoning to create a hearty, warming soup that comes together quickly and stores well for future meals.


Ingredients

  • Olive oil spray

  • 1.3 lbs 99% lean ground turkey

  • 1 medium onion, chopped

  • 1 bell pepper, chopped

  • 10 oz can rotel tomatoes with green chilies

  • 15 oz canned or frozen corn, drained

  • 15 oz no salt added kidney beans, drained

  • 8 oz tomato sauce

  • 16 oz can fat-free refried beans

  • 2 tablespoons + 1 1/2 teaspoons taco seasoning, or 1 packet store bought low-sodium taco seasoning

  • 2 1/2 cups less-sodium chicken broth


Instructions

  • Spray a large pot with olive oil spray and place it over medium heat.

  • Add the ground turkey and cook, breaking it up with a wooden spoon, until browned and cooked through.

  • Add the chopped onion and bell pepper and cook for 2–3 minutes, until slightly softened.

  • Add the rotel tomatoes with green chilies, corn, kidney beans, tomato sauce, refried beans, taco seasoning, and chicken broth.

  • Stir well to fully combine all ingredients.

  • Bring the soup to a boil, then cover and reduce heat to a simmer.

  • Simmer for 10–15 minutes, stirring occasionally, until heated through and slightly thickened.

 

  • Remove from heat and serve hot with desired toppings.

Notes

  • Stir well after adding the refried beans to ensure a smooth, evenly thickened soup.

  • Allow the soup to rest a few minutes before serving for best texture.

  • Leftovers freeze well in individual portions for quick future meals.
