Irish Pub Potato Nachos are a hearty, shareable dish made with crispy roasted potatoes, melted cheese, bacon, and green onions. Inspired by pub-style comfort food, they work well for St Patrick’s Day meals, casual gatherings, or relaxed family dinners.
Ingredients

3–4 russet potatoes

1–2 cups cheese (white cheddar, yellow cheddar, or cheddar jack)

1 tablespoon onion powder

1 tablespoon garlic powder

½ cup chopped green onion (3–4 stalks)

Instructions

Preheat the oven to 385°F (195°C). Line a baking sheet with foil and arrange the bacon slices in a single layer without overlapping.

Bake the bacon for 15–20 minutes, until crisp to your preference. Remove from the oven, cool slightly, then chop into bite-sized pieces and set aside.

Increase the oven temperature to 400°F (205°C). Wash and dry the potatoes, then slice them into ¼-inch rounds.

Place the potato slices in a large bowl and toss with olive oil, paprika, onion powder, garlic powder, salt, and pepper until evenly coated.

Arrange the potatoes in a single layer on two baking sheets. Bake for 20 minutes, flip the slices, then bake for another 20 minutes until golden and crisp.

Switch the oven to high broil. Transfer the roasted potatoes to a cast iron skillet or baking dish.

Layer the potatoes with shredded cheese, chopped bacon, and green onions. Repeat layers until all ingredients are used.

Broil until the cheese is melted and bubbly, watching closely to prevent burning.

Remove from the oven, add dollops of sour cream, and serve immediately.
