Vegetables:

  • 2 medium bell peppers, thinly sliced

  • 2 cups broccoli florets (200g)

  • 1 cup carrots, thinly sliced

  • ½ cup green onions, sliced (for garnish)

Homemade Teriyaki Sauce:

  • ¼ cup soy sauce (60ml), low-sodium

  • 2 tablespoons honey

  • 1 tablespoon rice vinegar

  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)


Instructions

  1. Make the Teriyaki Sauce
    In a bowl, whisk together soy sauce, honey, rice vinegar, and the cornstarch slurry. Mix until smooth and set aside.

  2. Cook the Ground Turkey
    Heat olive oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook 5–7 minutes, breaking it apart with a wooden spoon until fully browned.

  3. Add Garlic and Ginger
    Stir in the minced garlic and grated ginger. Cook 1–2 minutes until aromatic and well mixed with the turkey.

  4. Add the Vegetables
    Add bell peppers, broccoli florets, and sliced carrots. Stir well and cook 5–7 minutes until vegetables are tender-crisp and brightly colored.

  5. Add the Teriyaki Sauce
    Pour in the homemade teriyaki sauce. Stir to coat everything evenly, then simmer 2–3 minutes until the sauce thickens and becomes glossy.

  6. Finish and Serve
    Remove from heat. Garnish with sliced green onions.
    Serve over rice, noodles, quinoa, or cauliflower rice.
