Ingredients
For the Mashed Potatoes
-
2 lbs potatoes, peeled and cubed
-
½ cup warm milk
-
¼ cup butter
-
Salt, to taste
For the Shrimp
-
1 lb large shrimp, peeled and deveined
-
2 tbsp olive oil
-
1 tsp paprika
-
1 tsp garlic powder
-
Salt and black pepper, to taste
For the Creamy Garlic Sauce
-
2 tbsp butter
-
4 cloves garlic, minced
-
1 cup heavy cream
-
½ cup grated Parmesan cheese
-
1 tsp Dijon mustard (optional)
-
Salt and pepper, to taste
-
Fresh thyme leaves, for garnish
Instructions
-
Bring a large pot of salted water to a boil. Add the potatoes and cook for about 15 minutes, or until fork-tender.
-
Drain the potatoes and mash them while still hot. Add butter and warm milk, mixing until smooth and creamy. Season with salt and keep warm.
-
Pat the shrimp dry and place them in a bowl. Toss with olive oil, paprika, garlic powder, salt, and black pepper.
-
Heat a large skillet over medium-high heat. Add the shrimp in a single layer and sear for 2–3 minutes per side until pink and lightly golden. Remove shrimp from the skillet and set aside.
-
Reduce heat to medium and add butter to the same skillet. Once melted, add minced garlic and sauté for about 30 seconds until fragrant.
-
Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and Dijon mustard if using. Whisk until the sauce is smooth and slightly thickened. Season with salt and pepper.
-
Return the shrimp to the skillet and gently stir to coat them in the sauce. Warm through for about 1 minute, then remove from heat.
-
To serve, spoon mashed potatoes onto plates, top with shrimp, and drizzle generously with creamy garlic sauce. Garnish with fresh thyme and serve immediately.
Notes
-
Pat shrimp dry before cooking to ensure proper searing.
-
Keep the sauce at a gentle simmer to prevent separation.
-
Best served fresh for the creamiest texture.
