Description

Creamy Garlic Shrimp served over smooth mashed potatoes is a comforting seafood dinner that comes together quickly. Tender shrimp are coated in a rich garlic Parmesan sauce and spooned over fluffy potatoes for a satisfying, no-stress meal perfect for busy nights.


Ingredients

For the Mashed Potatoes

  • 2 lbs potatoes, peeled and cubed

  • ½ cup warm milk

  • ¼ cup butter

  • Salt, to taste

For the Shrimp

  • 1 lb large shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • Salt and black pepper, to taste

For the Creamy Garlic Sauce

  • 2 tbsp butter

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • 1 tsp Dijon mustard (optional)

  • Salt and pepper, to taste

  • Fresh thyme leaves, for garnish


Instructions

  • Bring a large pot of salted water to a boil. Add the potatoes and cook for about 15 minutes, or until fork-tender.

  • Drain the potatoes and mash them while still hot. Add butter and warm milk, mixing until smooth and creamy. Season with salt and keep warm.

  • Pat the shrimp dry and place them in a bowl. Toss with olive oil, paprika, garlic powder, salt, and black pepper.

  • Heat a large skillet over medium-high heat. Add the shrimp in a single layer and sear for 2–3 minutes per side until pink and lightly golden. Remove shrimp from the skillet and set aside.

  • Reduce heat to medium and add butter to the same skillet. Once melted, add minced garlic and sauté for about 30 seconds until fragrant.

  • Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and Dijon mustard if using. Whisk until the sauce is smooth and slightly thickened. Season with salt and pepper.

  • Return the shrimp to the skillet and gently stir to coat them in the sauce. Warm through for about 1 minute, then remove from heat.

 

  • To serve, spoon mashed potatoes onto plates, top with shrimp, and drizzle generously with creamy garlic sauce. Garnish with fresh thyme and serve immediately.
