Description

These Chocolate Cocoa Cookies are rich, soft cookies made entirely with cocoa powder and no chocolate chips. They’re simple to prepare using everyday pantry ingredients and are perfect for everyday baking when you want a homemade chocolate dessert without extra add-ins.


Ingredients

  • 140 g (1 cup) all-purpose flour (dip and sweep)

  • 50 g (½ cup) cocoa powder

  • ½ teaspoon baking soda

  • 150 g (⅔ cup) unsalted butter

  • 175 g (½ cup and ⅓ cup) granulated sugar

  • 1 teaspoon pure vanilla extract

  • 1 large egg


Instructions

  1. Preheat the oven to 350°F (177°C). Line a baking sheet with parchment paper or a silicone baking mat and set aside.

  2. In a medium bowl, mix together the flour, cocoa powder, and baking soda until evenly combined. Set aside.

  3. Melt the butter in a small pan over medium heat until about halfway melted. Remove from heat and stir until fully melted. Let cool slightly.

  4. Place the sugar in a large bowl and add the melted butter. Mix well until glossy and fully combined.

  5. Add the egg and vanilla extract and stir until smooth and fully incorporated.

  6. Add the flour mixture in two batches, stirring after each addition until the dough comes together evenly.

  7. Roll the dough into 52–53 gram balls (about 2½ tablespoons each) and place on the prepared baking sheet. Alternatively, divide the dough evenly into 10 portions and roll into balls.

  8. Bake for 8–11 minutes, until the cookies are slightly set. The tops should look dry but still feel soft.

  9. Remove from the oven and let the cookies cool on the baking sheet for about 10 minutes, until the bottoms are firm. The cookies will be slightly puffy. If desired, gently press the tops with the back of a spoon while warm.

Notes

  • Measure the flour using the dip-and-sweep method to avoid adding too much flour.

  • Do not overbake; the cookies will firm up as they cool.

  • Letting the cookies cool on the baking sheet helps them set without drying out.

  • Store cooled cookies in an airtight container at room temperature for up to 4 days.

 

  • Freeze baked cookies for up to 2 months and thaw at room temperature before serving.
