Ingredients
For the Steak Seasoning
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1/2 teaspoon smoked paprika
-
1 teaspoon salt
-
1/2 teaspoon black pepper Freshly ground if you have it!
For the Steak Bites & Sauce
-
1.5 lbs sirloin steak Ribeye or tri-tip also work wonderfully.
-
2 tablespoons olive oil
-
4 tablespoons butter I use unsalted, just like Grandma did.
-
6 cloves garlic Minced. This is the star, so don’t be shy!
-
1 tablespoon Worcestershire sauce Grandma called this her “secret umami.”
-
1 teaspoon fresh thyme Chopped. (or 1/2 teaspoon dried)
-
1 teaspoon fresh rosemary Chopped. (or 1/2 teaspoon dried)
-
1 tablespoon fresh parsley Chopped, (for garnish.)
Instructions
-
Remove the steak from the refrigerator and pat it completely dry with paper towels. Cut against the grain into 1-inch cubes.
-
In a small bowl, whisk together garlic powder, onion powder, smoked paprika, salt, and black pepper. Sprinkle over the steak cubes and toss until fully coated.
-
Heat olive oil in a large cast-iron skillet over high heat until the pan is smoking hot. Add the steak bites in a single layer, working in batches if needed. Cook without moving for 2 minutes.
-
Flip each piece and cook for another 1–2 minutes until browned and medium-rare. Remove steak bites and set aside on a plate.
-
Reduce heat to medium. In the same skillet, melt the butter. Add minced garlic and cook for about 30 seconds until fragrant, scraping up browned bits from the pan.
-
Stir in Worcestershire sauce, thyme, and rosemary. Let sizzle for about 30 seconds to release flavor.
-
Return steak bites and any juices to the skillet. Toss for about 1 minute to coat evenly and warm through.
-
Remove from heat, garnish with fresh parsley, and serve immediately.
Notes
-
Patting the steak dry is essential for a good sear.
-
Do not overcrowd the pan to maintain high heat.
-
Garlic cooks quickly, so keep the heat moderate once butter is added.
