Description

Crispy skillet breakfast potatoes made with golden potatoes, bacon, garlic, and a touch of maple syrup. A simple, flavor-packed side dish that pairs perfectly with eggs, pancakes, or any brunch spread.


Ingredients

  • 2 slices Bacon slices, freeze 30 min for easier cutting

  • 3 medium Golden potatoes, washed and diced into ½-inch cubes

  • 2 tablespoons Olive or avocado oil

  • Salt, pepper & Old Bay seasoning to taste

  • 12 cloves Garlic cloves, minced

  • 1 tablespoon Pure maple syrup

  • Parsley or chives, fresh (optional garnish)


Instructions

  • Freeze bacon for 30 minutes to make slicing easier, then cut into bite-size pieces using kitchen shears.

  • Wash, dry, and dice potatoes into ½-inch cubes. Soak in cold water to remove excess starch, then drain well.

  • Heat oil in a large skillet over medium-high heat. Add potatoes, season with salt, pepper, and Old Bay, and cook for 10 minutes until golden, stirring often.

  • Add bacon pieces and cook for 5–6 minutes until bacon is crispy and potatoes are well browned.

  • Stir in minced garlic and cook for 1–2 minutes until fragrant.

  • Drizzle maple syrup over the skillet, toss to coat, and cook for 1 more minute to lightly caramelize.

 

  • Garnish with parsley or chives if desired and serve hot.

Notes

  • Use evenly diced potatoes for consistent browning.

  • Keep the skillet hot for crisp results.

  • Add garlic near the end to avoid burning.
