Ingredients
-
2 slices Bacon slices, freeze 30 min for easier cutting
-
3 medium Golden potatoes, washed and diced into ½-inch cubes
-
2 tablespoons Olive or avocado oil
-
Salt, pepper & Old Bay seasoning to taste
-
1–2 cloves Garlic cloves, minced
-
1 tablespoon Pure maple syrup
-
Parsley or chives, fresh (optional garnish)
Instructions
-
Freeze bacon for 30 minutes to make slicing easier, then cut into bite-size pieces using kitchen shears.
-
Wash, dry, and dice potatoes into ½-inch cubes. Soak in cold water to remove excess starch, then drain well.
-
Heat oil in a large skillet over medium-high heat. Add potatoes, season with salt, pepper, and Old Bay, and cook for 10 minutes until golden, stirring often.
-
Add bacon pieces and cook for 5–6 minutes until bacon is crispy and potatoes are well browned.
-
Stir in minced garlic and cook for 1–2 minutes until fragrant.
-
Drizzle maple syrup over the skillet, toss to coat, and cook for 1 more minute to lightly caramelize.
-
Garnish with parsley or chives if desired and serve hot.
Notes
-
Use evenly diced potatoes for consistent browning.
-
Keep the skillet hot for crisp results.
-
Add garlic near the end to avoid burning.
