For the Pasta

  • 12 oz pasta

For the Chicken & Sauce

  • 1 lb chicken breast
    Opt for fresh or thawed frozen.

  • 2 tbsp butter
    Can substitute with olive oil.

  • 3 cloves garlic
    Minced, fresh garlic provides the best taste.

  • 1 medium onion
    Can use shallots for a milder flavor.

  • 1 cup heavy cream
    Coconut milk or cashew cream for dairy-free option.

  • 1 cup chicken broth
    Vegetable broth works for a vegetarian version.

  • 2 tbsp Italian seasoning
    Fresh herbs can elevate the flavor.

  • 1/2 tsp red pepper flakes
    Adjust based on heat preference.

  • 1 tsp salt

  • 1/2 tsp black pepper
    Use freshly ground for best flavor.

For the Finish

  • 1/2 cup Parmesan cheese
    Nutritional yeast is a vegan alternative.


Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8–10 minutes. Reserve 1 cup of pasta water, then drain and set aside.

  2. In a large skillet over medium heat, melt 2 tablespoons of butter. Add diced chicken and cook for 6–8 minutes until golden and cooked through. Remove chicken and set aside.

  3. In the same skillet, add the remaining butter. Sauté garlic and onion for 3–4 minutes until onion is translucent and fragrant.

  4. Pour in heavy cream and chicken broth. Add Italian seasoning, red pepper flakes, salt, and black pepper. Simmer for about 5 minutes until the sauce thickens slightly. Add reserved pasta water if needed to adjust consistency.

  5. Return chicken and pasta to the skillet. Toss well to coat everything in the sauce and cook for another 2 minutes until heated through. Adjust seasoning if needed.

  6. Plate the pasta, top with grated Parmesan cheese, garnish with fresh parsley if desired, and serve warm.

Notes

  • Reserve pasta water to control sauce thickness without diluting flavor.

  • Avoid boiling the sauce to keep it smooth and creamy.
