Ingredients
For the Chicken:
-
1.5 lbs (about 3 medium) boneless, skinless chicken breasts or thighs, cut into bite-sized chunks
-
1 tbsp olive oil or butter
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp smoked paprika
-
Salt and pepper, to taste
For the Creamy Sauce:
-
1 tbsp butter
-
2 cloves garlic, minced
-
1 cup heavy cream (or half & half)
-
½ cup chicken broth
-
½ cup sour cream
-
½ tsp mustard (optional)
-
¼ cup grated Parmesan cheese
-
Salt and black pepper, to taste
-
Fresh chopped parsley, for garnish
For Serving:
-
3 cups cooked white rice (long grain or jasmine)
Instructions
-
Season the chicken pieces with garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
-
Heat olive oil or butter in a large skillet over medium heat. Add the chicken and cook, turning occasionally, until golden on the outside and fully cooked through. Remove from the skillet and set aside.
-
In the same skillet, melt butter over medium-low heat. Add the minced garlic and cook briefly until fragrant.
-
Pour in the heavy cream and chicken broth, stirring to combine. Let the mixture warm gently.
-
Stir in the sour cream, mustard if using, and Parmesan cheese. Continue stirring until the sauce is smooth, creamy, and lightly thickened. Season with salt and black pepper to taste.
-
Return the cooked chicken to the skillet. Stir gently to coat with the sauce and let it simmer briefly so flavors come together.
-
Serve the creamy chicken over warm cooked white rice and garnish with fresh parsley.
Notes
-
Cut chicken pieces evenly so they cook at the same rate and stay tender.
-
Keep heat moderate when working with cream and sour cream to avoid curdling.
-
Stir the sauce gently once cheese is added for a smooth, creamy texture.
-
Taste before adding extra salt, as Parmesan and broth already add seasoning.
-
Let the sauce rest briefly before serving so it thickens naturally.
