Description

Chocolate Chip Cookie Cheesecake Bars are a simple layered dessert made with a soft cookie dough base, a creamy cheesecake center, and a crumbly cookie topping. This recipe is ideal for busy days, last-minute desserts, or when you want an easy homemade treat with minimal ingredients and effort.


Ingredients

  • 1 18 oz roll refrigerated chocolate chip cookie dough

  • 8 oz cream cheese, softened

  • 1/2 cup granulated sugar

  • 1 egg, room temperature

  • 1/2 tsp vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Line a 9-inch square baking dish with parchment paper or non-stick foil, leaving some overhang for easy removal. Set aside.

  3. Take a little more than half of the chocolate chip cookie dough and press it firmly into the bottom of the prepared baking dish, creating an even base layer.

  4. Using a stand mixer or hand-held mixer, beat the softened cream cheese until light, smooth, and fluffy.

  5. Add the granulated sugar and beat until fully combined and creamy.

  6. Beat in the egg and vanilla extract until the cheesecake mixture is smooth and uniform.

  7. Pour the cheesecake filling evenly over the cookie dough base and gently spread to the edges.

  8. Crumble the remaining cookie dough over the top of the cheesecake layer.

  9. Bake for 30–35 minutes, until the edges are set and lightly golden and the center is mostly firm.

  10. Remove from the oven and let the bars cool completely in the pan before cutting into squares.

  11. Store the bars in an airtight container in the refrigerator.

Notes

  • Allowing the bars to cool fully ensures clean slices and well-defined layers.

  • Make sure the cream cheese is fully softened to avoid lumps in the cheesecake layer.

  • Do not overbake; the center should be slightly soft when removed from the oven, as it will set while cooling.

 

  • These bars are best stored chilled and served cold or slightly softened at room temperature.
