Description
Cheesy Hamburger Rice Casserole is a simple, comforting dinner made with ground beef, rice, tomatoes, and cream of mushroom soup, finished with a melted mozzarella topping. It’s an easy casserole recipe that works well for busy nights when time and effort are limited.
Ingredients
-
1 pound ground beef
-
1 (10.75 ounce) can cream of mushroom soup
-
1 (14.5 ounce) can diced tomatoes with juice
-
½ cup long grain white rice
-
¾ cup shredded mozzarella cheese
-
salt and pepper to taste
Instructions
-
Heat a large skillet over medium-high heat. Add the ground beef and crumble it as it cooks. Cook and stir until evenly browned and fully cooked.
-
Drain off excess grease from the skillet and return the beef to the stovetop.
-
Stir in the cream of mushroom soup, diced tomatoes with their juice, and the uncooked rice until well combined.
-
Cover the skillet, reduce heat to low, and simmer for about 15 minutes, stirring occasionally, until the rice is tender and most of the liquid is absorbed.
-
Preheat the oven’s broiler.
-
Transfer the cooked mixture to an oven-safe casserole dish and spread evenly.
-
Sprinkle the shredded mozzarella cheese evenly over the top.
-
Broil until the cheese is melted and lightly toasted, watching closely to avoid burning.
-
Season with salt and pepper to taste and serve hot.
Notes
-
Stir occasionally while simmering to prevent the rice from sticking to the bottom of the skillet.
-
Watch carefully during broiling, as cheese can brown quickly.
-
Leftovers can be stored in the refrigerator for up to 3 days.
-
Reheat gently in the microwave or oven until warmed through.
