Easy Sausage and Cabbage Stir Fry is a simple, budget-friendly skillet meal made with browned kielbasa, tender cabbage, and savory aromatics. It cooks quickly in one pan, making it a practical option for busy weeknights and easy meal prep.


Ingredients

  • 1 lb kielbasa smoked sausage

  • 1 1/2 tbsps olive oil, divided

  • 1 medium onion, chopped

  • 3 garlic cloves, minced

  • 1 medium head cabbage, cored and chopped into 1-inch pieces (about 2 lbs)

  • 3/4 tsp kosher salt, plus more to taste

  • 1/2 tsp freshly ground black pepper

  • 1 tsp red wine vinegar


Instructions

  1. Halve the kielbasa lengthwise, then slice into 1/2-inch pieces.

  2. Heat a large deep skillet or Dutch oven over medium heat. Add 1/2 tablespoon olive oil and the kielbasa. Cook, tossing to coat, for about 3 minutes per side until browned. Transfer to a plate.

  3. Reduce heat to medium-low and add the remaining 1 tablespoon olive oil to the pan. Add the chopped onion and cook until softened, stirring occasionally.

  4. Add the minced garlic, chopped cabbage, kosher salt, and black pepper. Toss well to combine. Cover and cook for about 12 minutes, stirring every 4–5 minutes, until the cabbage is wilted and tender.

  5. Stir in the red wine vinegar, return the kielbasa to the pan, and cook covered for about 3 more minutes until everything is heated through.

  6. Taste and adjust salt if needed, then serve hot.

Notes

  • Browning the kielbasa first adds depth of flavor to the dish.

  • Keep the heat moderate to prevent the cabbage from browning too quickly.

  • This dish reheats well and can be stored in the refrigerator for up to 3 days.
